About the Process

Carbonic Maceration Pink Honey (Carbonic Maceration)
This is a refining method where the coffee undergoes a honey process after CM, which is an anaerobic fermentation in a carbon dioxide-sealed environment. The farm named it after the process of the mucilage changing to a pink color while a medium amount remains. It features a combination of the fruitiness and wine-like quality of CM, along with the sweetness and body of Honey.

Producer and Legacy

The founder, Dandy Dharmawan, was originally a researcher at ICRAF (International Centre for Research in Agroforestry). Based on his belief that "Indonesian coffee can be even more delicious," he meticulously developed refining equipment and dedicated himself to improving quality using a scientific approach.

However, in May 2025, our company, which has direct dealings with them, received the very sad news of Mr. Dandy Dharmawan's sudden passing. Nevertheless, his family continues to carry on his will and techniques, maintaining world-class quality.

◼️Achievements and Flavor Profile

Their capabilities are highly regarded internationally. In 2021, they won 4th place in the inaugural Cup of Excellence Indonesia (COE Indonesia), astounding buyers worldwide. Furthermore, they have demonstrated their ability to win top (1st) place in subsequent COE competitions.
