Indonesia is generally known for the wet-hulled process, often referred to as the Sumatra method. However, in recent years, there has been an increasing number of agricultural cooperatives and washing stations adopting diverse processes like fully washed and natural, aiming to leverage regional characteristics and improve quality. This trend is driven by the growth and demands of not only the export market but also the domestic Indonesian market, as well as the production of specialty-grade coffee, representing a move towards new market development.
At Sadayana Washing Station, farmers carefully hand-pick ripe red cherries and transport them to the washing station. The collected cherries are fed into a mechanical siphon, where they undergo density sorting and depulping, resulting in wet parchment. This parchment is then placed in fermentation tanks lined with ceramic tiles for approximately 16 hours of fermentation. After fermentation, the parchment is washed with clean water and finished. The drying area is a greenhouse-style patio to protect against rain, where the parchment is repeatedly stirred to achieve a uniform and ideal moisture content. The moisture content is achieved over 7 to 15 days, taking into account weather conditions and temperature/humidity.
By functioning as a central hub and an infrastructure for the local community, the washing station is showing progress in quality-driven processing, its diversity, sharing expertise in coffee cultivation, and ensuring traceability.

The Sadayana Washing Station was established in March 2022 by Sucafina, an exporter based in Bandung, West Java, and local partners. The name "Sadayana," meaning "working together" in Sundanese, was chosen for the washing station. Approximately 200 farmers deliver their cherries to the Sadayana Washing Station, and it was named "Sadayana: Working Together" with the hope that this washing station would grow alongside the regional coffee producers. The Sundanese are one of the three major ethnic groups on Java Island, and the area where the Sadayana Washing Station is located is predominantly Sundanese. This name also reflects respect for the local people and culture within Indonesia, a country with multiple languages and ethnicities.
